SPICY GLAZED SALMON

Packed with protein, healthy fats, and vibrant veggies, this Spicy Glazed Salmon served with a side salad is perfect for a light lunch or dinner.
INGREDIENTS
- 1/4 C Kelly’s Habanero Pepper Jelly
- 1 T sesame oil
- 1 tsp soy sauce
- Two 4 oz salmon filets
- 1/4 tsp fine sea salt
- 3 T olive oil
- 1 T fresh parsley, chopped
Salad Dressing:
- 1 tsp olive oil
- 1/2 tsp rice vinegar
- Pinch of fine sea salt
- 4 C mixed greens
INSTRUCTIONS
- Whisk together Kelly’s Habanero Pepper Jelly, sesame oil and soy sauce in a small bowl. Place salmon on a plate; pour mixture over salmon. Allow to sit while mixing dressing.
- Whisk together olive oil, rice vinegar, and pinch of salt in a large bowl. Add mixed greens; toss to combine. Divide between 2 plates.
- Heat olive oil in a large pan or cast iron pan over med. high heat. Once oil is shimmering, place salmon in pan, skin side down, & pour remaining marinade over salmon. Sprinkle each piece evenly with salt. Cook for 4 min. uncovered.
- Turn salmon over & cook 4-5 minutes or until center is medium. Serve with fresh parsley.
