BAKED BRIE WITH PUFF PASTRY

Perfect for any occasion, this sweet and savory appetizer from Lea Dixon is made by baking a rich brie wheel, Kelly’s Marionberry Habanero Pepper Jelly (or another favorite flavor of Kelly’s Jelly) and fresh berries in a flaky puff pastry. The result is a warm, gooey and flavorful appetizer that is as beautiful as it is delicious. Serve it with warm bread, crackers, or crostini.
INGREDIENTS
- 8 oz Brie Wheel
- 1 jar Kelly’s Marionberry Habanero Pepper Jelly (or another favorite flavor of Kelly’s Jelly)
- 1 egg
- 2 T water
- Dash of salt
- 1-2 cups fresh berries
- Puff Pastry
INSTRUCTIONS
- Preheat oven to 400 degrees.
- Cut the top rind off the brie wheel.
- Roll out the puff pastry and place the brie wheel on the pastry.
Spread Kelly’s Marionberry Habanero Pepper Jelly on the top of your brie wheel; the jelly first helps the berries stay in place.
- Pile your fresh berries on top of the brie and jelly.
- Wrap the brie, jelly and berries with the puff pastry.
- Beat one egg with 2 T water and dash of salt to make egg wash.
- Brush egg wash on top and sides of puff pastry dough, for a beautiful golden crust when baked.
- Bake at 400 degrees for about 20 minutes.
- Cut out small wedge of warm brie, garnish with fresh berries and bay leaf or basil.
- Serve with warm bread, crackers or crostini.
