STRAWBERRY CHEESE DANISH PASTRY

Indulge in a treat bursting with flavor! This Strawberry Cheese Danish Pastry recipe from Gerry Speirs, crafted with Kelly's Oregon Strawberry Preserves, combines the best of sweet and savory in every bite.
Imagine a golden, flaky pastry enveloping a rich mascarpone cheese filling, swirled with the fresh taste of Kelly’s Oregon Strawberry Preserves. Crisp on the outside, creamy and fruity on the inside, perfect with a cup of coffee or as a sweet pick-me-up any time of day.
INGREDIENTS
- 1 pack frozen puff pastry, thawed
- 1/2 C melted butter
- 8 ox mascarpone cheese
- 1 C powdered sugar
- 2 tsp vanilla
- 1 C Kelly’s Oregon Strawberry Preserves
INSTRUCTIONS
- Preheat the oven to 375 degrees.
- Generously brush a muffin pan with the melted butter.
- Unfold the puff pastry and divide each square into 3x3 individual squares.
Place each square into the muffin pan; some will hang over the top (that’s okay). Press down a little to create a flat bottom.
- Mix the mascarpone, powdered sugar and vanilla until creamy and has no lumps.
- Add about 1 T of the cheese mixture to the bottom of each pastry and then top with 1 T of Kelly’s Oregon Strawberry Preserves.
- Bake 30-35 minutes, until pastry has risen and is golden brown.
- Let cool 5-10 minutes before enjoying.
